Tolosaldea have become a point of reference in Euskadi, with relation to the gastronomy, due to the different elements that they offer; as well as all the museums related to the gastronomy, we also have products of the first gastronomic level, such as Idiazabal cheese, Tolosa´s black beans, chilli peppers from Ibarra, pork blood sausage from Beasain, sheep blod sausage from Zaldibia, and of course the confectionary world (xaxus, tejas y cigarrillos from Tolosa, martintxos from Beasain and the cake from Segura, for example). We also include in the gastronomy world the Tolosa Gourmet initiative, the markets in Ordizia and Tolosa, and also all the markets that are held in the different towns during the whole year.
In Tolosa we will visit the Gorrotxategi Confectionery Museum an enjoy a Chocolate tasting. Gorrotxategi family are a three-generation link of a long tradition of chocolate making tradition that goes back to 1680. They would make candles and wax matches for church offerings and home use along with sweets provided for by bees when they were provided with honey and beeswax when there was a shortage of sugar for confectionary ends, used in apothecaries as a means of therapy. We will know how they became one of the best confectioneries of Euskadi.
Later we will take Ordizia's streets to visit this beautiful city and to learn something else of this region in the Goierri's Interpretation Center (name of the region). Ordizia traditionally has developed great number of markets and fairs related to the agriculture and the cattling, turning into a reference into Gipuzkoa and into the Basque Country. The cheese with Denomination of Origin Idiazabal is elaborated at present by approximately hundred small companys from the raw milk of the sheeps of race latxa and carranzana, in this center we will learn one of our gastronomic values of more relief, Idiazabal's cheese.
If we visit on a market day we will do a brief tour into the Tinglado at Tolosa or the traditional market of Ordizia.
